Mixology Cocktail Competition

RULES & INFORMATION
GENERAL
1. The BACARDI 150th Mixology Cocktail Competition (Tue 21st Feb) is open to all bartenders working in the Republic of Ireland and is organised by the Bartenders Association of Ireland & Edward Dillon.
2. The exclusive sponsor is Edward Dillon & Co. Ltd.
3. The BAI reserve the right to reject any competitor, recipe or recipe name considered unacceptable for the competition.
4. Entry will be limited to ensure the smooth running of the competition. Early entry is advised.
5. It is the responsibility of each competitor to ensure their recipe and routine is within the rules.
6. All competitors must report for competition briefing and time slot allocation @ 11am on Tue 21st @ Hospitality Expo 2012, RDS, Dublin 4.
7. All competitors compete once only. There is no final.
8. All cocktail recipes submitted will become the property of the BAI & Edward Dillon & Co. Ltd.
ENTRIES
9. Entries will be accepted from February 6th to February 16th but may close early if we reach our maximum number of suitable applicants.
10. Entry can only be made through the Bartenders Association of Ireland website here>>> and not through facebook or other media.
11. All competitors must be over 18 years of age.12. Successful entrants will be posted on www.bartender.ie on 17th February.

The winner must comply with all rules and guidelines as determined by the organising committee of the BAI.
SET-
1. Each competitor will set-
2. Only a work station, ice bucket (with ice) and your chosen Bacardi brand will be provided. You must supply everything else.
PERFORMANCE & ROUTINE
3. The judges will be looking at your professionalism, dress sense, communication skills, personality, knowledge, customer service skills and competence.
4. Competitors will be allocated a 15 minute slot. To include set-
5. Competitors must produce three (3) identical cocktails.
6. Competitors are expected to talk to and engage with the judges and audience during their time on stage. Tell us about your cocktail, the inspiration for the name and recipe, the products your using and why, etc, etc. Share with the judges and audience any additional knowledge you may have.
RECIPES
7. Competitors are required to submit an original recipe using Bacardi Superior Rum, Bacardi 8 year old, Bacardi Gold or Bacardi Oakheart.
8. No other rum product may be used.
9. Only the Bacardi bottle can be displayed during the competition.
10. All other ingredients must be in jugs or small unbranded pouring utencils.
11. Cocktails should contain no more than 7cls of alcoholic product(s) in total.
12. Recipes shall be expressed in centilitres, divided in respectively whole numbers (1cl, 2cl, 3cl, etc.) and/or half numbers (0.5cl, 1.5cl, 2.5cl, etc.), dashes and/or drops being the smallest quantities.
13. Competitors may use any method they chose to prepare their cocktails.
14. Competitors are required to bring their own bar utensils & equipment to prepare the cocktail. This includes ice crushers, shakers, tongs, strainers, etc.
15. Competitors are to supply their own choice of glassware for their cocktails.
19. Dairy products shall consist only of milk, cream and eggs.
20. House specific or homemade ingredients are permitted.
24. Only the Bacardi brands will be supplied.
GARNISH
25. This mixology competition supports freedom of expression. Garnish your cocktail anyway you want.
